Ingredients:

  • 1 lb (454g) ground beef (lean, 85-93%)
  • 3 cloves garlic, minced
  • 1 tbsp (15 ml) sesame oil
  • ¼ cup (50g) brown sugar, light or dark, packed
  • ¼ cup (60 ml) soy sauce, low-sodium recommended
  • 1 tsp (2g) fresh ginger, grated (or ½ tsp (1g) ground ginger)
  • ½ tsp (1g) crushed red pepper flakes (optional)
  • 1 tbsp (15 ml) rice vinegar (optional)
  • 2 green onions (scallions), sliced, plus extra for garnish
  • Cooked white or brown rice, for serving
  • 1 tsp (2g) sesame seeds, for garnish

Instructions:

  1. In a large skillet over medium-high heat, brown the ground beef, breaking it up with a spatula. Drain any excess fat. Cook until no longer pink (about 5-7 minutes).
  2. Stir in the minced garlic and sesame oil. Cook for 1-2 minutes, or until fragrant.
  3. Add the soy sauce, brown sugar, ginger, and red pepper flakes (if using). Stir well to coat the beef.
  4. Reduce heat to medium and simmer for 2-3 minutes, allowing the flavors to meld and the sauce to slightly thicken.
  5. Stir in the sliced green onions and rice vinegar (if using). Remove from heat.
  6. Spoon the beef over bowls of cooked rice.
  7. Garnish with extra green onions and sesame seeds. Serve immediately.
