Ingredients:
- 1.5 lbs (680g) boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 tbsp (15 ml) soy sauce
- 1 tbsp (15 ml) cornstarch
- 1 tsp (5 ml) grated ginger
- 1 clove garlic, minced
- 1/2 cup (120 ml) bourbon whiskey
- 1/2 cup (120 ml) soy sauce
- 1/2 cup (100g) packed brown sugar
- 1/4 cup (60 ml) apple cider vinegar
- 1 tbsp (15 ml) sesame oil
- 1 tbsp (15 ml) cornstarch
- 1/2 tsp (2.5 ml) ground ginger
- 1/4 tsp (1.25 ml) garlic powder
- 1/4 tsp (1.25 ml) red pepper flakes (optional)
- 2 tbsp (30 ml) vegetable oil
- Sesame seeds (optional)
- Chopped green onions (optional)
Instructions:
- Combine chicken pieces with soy sauce, cornstarch, ginger, and garlic in a large bowl. Mix well and refrigerate for at least 30 minutes.
- In a separate bowl, whisk together bourbon, soy sauce, brown sugar, apple cider vinegar, sesame oil, cornstarch, ginger, garlic powder, and red pepper flakes (if using). Ensure the cornstarch is fully dissolved.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken in a single layer (work in batches if necessary). Cook until browned on all sides and cooked through (165°F/74°C).
- Pour the bourbon sauce over the cooked chicken. Bring to a simmer and cook, stirring constantly, until the sauce thickens and coats the chicken (about 3-5 minutes).
- Garnish with sesame seeds and chopped green onions (if desired). Serve immediately over rice, noodles, or your favorite side. Enjoy this delicious bourbon chicken.
