Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tbsp (15 ml) soy sauce
  • 1 tbsp (15 ml) cornstarch
  • 1 tsp (5 ml) grated ginger
  • 1 clove garlic, minced
  • 1/2 cup (120 ml) bourbon whiskey
  • 1/2 cup (120 ml) soy sauce
  • 1/2 cup (100g) packed brown sugar
  • 1/4 cup (60 ml) apple cider vinegar
  • 1 tbsp (15 ml) sesame oil
  • 1 tbsp (15 ml) cornstarch
  • 1/2 tsp (2.5 ml) ground ginger
  • 1/4 tsp (1.25 ml) garlic powder
  • 1/4 tsp (1.25 ml) red pepper flakes (optional)
  • 2 tbsp (30 ml) vegetable oil
  • Sesame seeds (optional)
  • Chopped green onions (optional)

Instructions:

  1. Combine chicken pieces with soy sauce, cornstarch, ginger, and garlic in a large bowl. Mix well and refrigerate for at least 30 minutes.
  2. In a separate bowl, whisk together bourbon, soy sauce, brown sugar, apple cider vinegar, sesame oil, cornstarch, ginger, garlic powder, and red pepper flakes (if using). Ensure the cornstarch is fully dissolved.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken in a single layer (work in batches if necessary). Cook until browned on all sides and cooked through (165°F/74°C).
  4. Pour the bourbon sauce over the cooked chicken. Bring to a simmer and cook, stirring constantly, until the sauce thickens and coats the chicken (about 3-5 minutes).
  5. Garnish with sesame seeds and chopped green onions (if desired). Serve immediately over rice, noodles, or your favorite side. Enjoy this delicious bourbon chicken.
