Ingredients:

  • 1.5 lbs (680g) sirloin steak or ribeye, cut into 1-inch cubes
  • 2 tbsp (30ml) olive oil
  • 4 tbsp (57g) unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
  • Salt and freshly ground black pepper, to taste
  • Optional garnish: chopped fresh parsley

Instructions:

  1. Pat the steak cubes dry with paper towels. Season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Add the steak bites to the hot skillet in a single layer, ensuring not to overcrowd the pan. Cook in batches if necessary.
  4. Cook for 2–3 minutes without moving them, until browned on one side.
  5. Flip the steak bites and cook another 2–3 minutes until nicely browned and cooked to your desired doneness.
  6. Reduce heat to medium. Add the butter, minced garlic, and thyme to the pan.
  7. Stir the steak bites in the melted butter and garlic for 1–2 minutes, spooning the garlic butter over the steak.
  8. Remove from heat and garnish with fresh parsley, if desired. Serve immediately.
