Ingredients:

  • 1 cup (226g) unsalted butter, softened
  • 1 cup (120g) powdered sugar
  • 2 cups (250g) all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 large egg yolk
  • 1/2 cup (150g) fruit jam (e.g., raspberry, strawberry, or apricot)

Instructions:

  1. In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  2. Add egg yolk and vanilla extract, mixing until well combined.
  3. Gradually add flour and salt, folding until the dough comes together.
  4. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  5. Preheat your oven to 350°F (175°C).
  6. On a floured surface, roll out the dough to about 1/4 inch thick.
  7. Use a cookie cutter to cut out shapes, including cutting out the centres for jam filling.
  8. Place half of the cookies on the baking sheet, and fill the centre with a teaspoon of jam.
  9. Top with the other cookies, pressing gently to seal.
  10. Bake for 12-15 minutes until the edges are lightly golden.
  11. Allow the cookies to cool on a wire rack before serving.
