Ingredients:
- 1 cup (226g) unsalted butter, softened
- 1 cup (120g) powdered sugar
- 2 cups (250g) all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 large egg yolk
- 1/2 cup (150g) fruit jam (e.g., raspberry, strawberry, or apricot)
Instructions:
- In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Add egg yolk and vanilla extract, mixing until well combined.
- Gradually add flour and salt, folding until the dough comes together.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- Preheat your oven to 350°F (175°C).
- On a floured surface, roll out the dough to about 1/4 inch thick.
- Use a cookie cutter to cut out shapes, including cutting out the centres for jam filling.
- Place half of the cookies on the baking sheet, and fill the centre with a teaspoon of jam.
- Top with the other cookies, pressing gently to seal.
- Bake for 12-15 minutes until the edges are lightly golden.
- Allow the cookies to cool on a wire rack before serving.
