Ingredients:

  • 2 large ripe tomatoes, cut into 1-inch chunks (about 500g / 1.1 lbs)
  • 1 English cucumber, peeled and sliced into 1/4-inch thick rounds (about 300g / 0.66 lbs)
  • 1/2 red onion, thinly sliced (about 50g / 0.11 lbs)
  • 1/4 cup fresh basil leaves, roughly chopped (about 5g)
  • 1/4 cup fresh parsley, roughly chopped (about 5g)
  • 1/4 cup extra virgin olive oil (60ml)
  • 2 tablespoons red wine vinegar (30ml)
  • 1 clove garlic, minced (about 3g)
  • 1 teaspoon dried oregano (2g)
  • 1/2 teaspoon granulated sugar (2g)
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Wash and chop the tomatoes, cucumber, and red onion according to the ingredient list.
  2. In a large bowl, combine the chopped tomatoes, cucumber, red onion, basil, and parsley.
  3. In a small bowl or jar, whisk together the olive oil, red wine vinegar, minced garlic, oregano, sugar, salt, and pepper until well combined.
  4. Pour the dressing over the salad and gently toss to coat evenly.
  5. Cover the bowl and refrigerate for at least 15 minutes to allow the flavors to meld.
  6. Serve chilled or at room temperature. Garnish with extra fresh basil or parsley, if desired.
