Ingredients:
- 2 large ripe tomatoes, cut into 1-inch chunks (about 500g / 1.1 lbs)
- 1 English cucumber, peeled and sliced into 1/4-inch thick rounds (about 300g / 0.66 lbs)
- 1/2 red onion, thinly sliced (about 50g / 0.11 lbs)
- 1/4 cup fresh basil leaves, roughly chopped (about 5g)
- 1/4 cup fresh parsley, roughly chopped (about 5g)
- 1/4 cup extra virgin olive oil (60ml)
- 2 tablespoons red wine vinegar (30ml)
- 1 clove garlic, minced (about 3g)
- 1 teaspoon dried oregano (2g)
- 1/2 teaspoon granulated sugar (2g)
- Salt and freshly ground black pepper, to taste
Instructions:
- Wash and chop the tomatoes, cucumber, and red onion according to the ingredient list.
- In a large bowl, combine the chopped tomatoes, cucumber, red onion, basil, and parsley.
- In a small bowl or jar, whisk together the olive oil, red wine vinegar, minced garlic, oregano, sugar, salt, and pepper until well combined.
- Pour the dressing over the salad and gently toss to coat evenly.
- Cover the bowl and refrigerate for at least 15 minutes to allow the flavors to meld.
- Serve chilled or at room temperature. Garnish with extra fresh basil or parsley, if desired.
