Ingredients:

  • 1 pound ground beef or Italian sausage
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) crushed tomatoes
  • 1 can (8 oz) tomato sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 15 oz ricotta cheese
  • 1 large egg
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese, divided
  • 9-12 lasagna noodles, broken to fit
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Turn on the Instant Pot and select the sauté function. Add ground beef or sausage; cook until browned (around 5-7 minutes). Add onions and garlic; sauté until soft.
  2. Stir in crushed tomatoes, tomato sauce, tomato paste, Italian seasoning, salt, and pepper. Let it simmer for a few minutes, then turn off the sauté function.
  3. In a separate bowl, mix ricotta, egg, and Parmesan until combined.
  4. Spread a thin layer of meat sauce at the bottom of the pot. Layer noodles, cheese mixture, and meat sauce; repeat until ingredients are used. Finish with a layer of meat sauce topped with mozzarella.
  5. Seal the pot, set to high pressure, and cook for 30 minutes. Allow for a natural pressure release for about 10 minutes before quick-releasing any remaining pressure.
  6. Carefully remove the lasagna from the pot, garnish with basil or parsley, and slice to serve.
