Ingredients:
- 1/4 cup (60g) prepared hummus
- 1 large whole wheat tortilla (about 10 inches/25cm diameter)
- 1/4 cup (40g) shredded carrots
- 1/4 cup (30g) chopped cucumber (seeds removed)
- 1/4 cup (30g) chopped bell pepper (any colour you fancy!)
- 1/4 cup (30g) baby spinach leaves
- 2 tablespoons (10g) crumbled feta cheese (optional)
- 1 tablespoon (15ml) lemon juice
- Salt and pepper to taste
- Optional: A pinch of red pepper flakes
Instructions:
- Wash and chop all the veggies into bite-sized pieces. Place them in a bowl and season them with lemon juice, salt, and pepper.
- If you like a softer wrap, warm the tortilla in a dry skillet over medium heat for about 30 seconds per side, or in the microwave for 10-15 seconds.
- Lay the tortilla flat on a clean surface. Spread the hummus evenly over the surface, leaving about 1 inch (2.5cm) of space around the edge.
- Arrange the chopped veggies evenly over the hummus, being careful not to overload the wrap. Sprinkle with crumbled feta cheese (if using).
- Fold in the sides of the tortilla, then tightly roll it up from the bottom.
- Slice the wrap in half and serve immediately.
