Ingredients:

  • 1/4 cup (60g) prepared hummus
  • 1 large whole wheat tortilla (about 10 inches/25cm diameter)
  • 1/4 cup (40g) shredded carrots
  • 1/4 cup (30g) chopped cucumber (seeds removed)
  • 1/4 cup (30g) chopped bell pepper (any colour you fancy!)
  • 1/4 cup (30g) baby spinach leaves
  • 2 tablespoons (10g) crumbled feta cheese (optional)
  • 1 tablespoon (15ml) lemon juice
  • Salt and pepper to taste
  • Optional: A pinch of red pepper flakes

Instructions:

  1. Wash and chop all the veggies into bite-sized pieces. Place them in a bowl and season them with lemon juice, salt, and pepper.
  2. If you like a softer wrap, warm the tortilla in a dry skillet over medium heat for about 30 seconds per side, or in the microwave for 10-15 seconds.
  3. Lay the tortilla flat on a clean surface. Spread the hummus evenly over the surface, leaving about 1 inch (2.5cm) of space around the edge.
  4. Arrange the chopped veggies evenly over the hummus, being careful not to overload the wrap. Sprinkle with crumbled feta cheese (if using).
  5. Fold in the sides of the tortilla, then tightly roll it up from the bottom.
  6. Slice the wrap in half and serve immediately.
