Ingredients:

  • 4 boneless, skinless chicken breasts (about 6 oz/170g each)
  • 1 tbsp olive oil (15 ml)
  • 1 tsp smoked paprika (5 ml)
  • 1/2 tsp garlic powder (2.5 ml)
  • 1/2 tsp onion powder (2.5 ml)
  • Salt and freshly ground black pepper, to taste
  • 1/3 cup honey (80 ml)
  • 1-2 tsp hot sauce (like Frank's RedHot or Sriracha), to taste (5-10 ml)
  • 1/2 tsp crushed red pepper flakes (optional, for extra heat) (2.5 ml)
  • 1 tsp apple cider vinegar (optional, for added tang) (5 ml)
  • 1/2 cup crumbled feta cheese (60g)
  • Fresh parsley or basil, chopped (optional, for garnish)
  • Lemon wedges (optional, for serving)

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking dish with foil or parchment.
  2. Pat chicken dry. Rub with olive oil, then season with smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. For extra flavour, sear chicken in a hot skillet for 2-3 minutes per side until golden brown. Transfer to the prepared baking dish.
  4. Place the seasoned chicken in the preheated oven and bake for 18-22 minutes, or until the internal temperature reaches 165°F (74°C). Use a meat thermometer for accuracy!
  5. While the chicken bakes, combine honey, hot sauce, crushed red pepper flakes (if using), and apple cider vinegar (if using) in a small saucepan over low heat. Stir until warm and well combined. Taste and adjust spice level.
  6. Once the chicken is cooked, remove it from the oven. Sprinkle crumbled feta cheese evenly over the top, then drizzle generously with the hot honey.
  7. Return the baking dish to the oven for 3-5 minutes, just until the feta is warmed through and slightly softened, and the hot honey starts to caramelize.
  8. Garnish with fresh parsley or basil (if using). Serve hot with lemon wedges (optional).
