Ingredients:
- 4 boneless, skinless chicken breasts (about 6 oz/170g each)
- 1 tbsp olive oil (15 ml)
- 1 tsp smoked paprika (5 ml)
- 1/2 tsp garlic powder (2.5 ml)
- 1/2 tsp onion powder (2.5 ml)
- Salt and freshly ground black pepper, to taste
- 1/3 cup honey (80 ml)
- 1-2 tsp hot sauce (like Frank's RedHot or Sriracha), to taste (5-10 ml)
- 1/2 tsp crushed red pepper flakes (optional, for extra heat) (2.5 ml)
- 1 tsp apple cider vinegar (optional, for added tang) (5 ml)
- 1/2 cup crumbled feta cheese (60g)
- Fresh parsley or basil, chopped (optional, for garnish)
- Lemon wedges (optional, for serving)
Instructions:
- Preheat oven to 400°F (200°C). Line a baking dish with foil or parchment.
- Pat chicken dry. Rub with olive oil, then season with smoked paprika, garlic powder, onion powder, salt, and pepper.
- For extra flavour, sear chicken in a hot skillet for 2-3 minutes per side until golden brown. Transfer to the prepared baking dish.
- Place the seasoned chicken in the preheated oven and bake for 18-22 minutes, or until the internal temperature reaches 165°F (74°C). Use a meat thermometer for accuracy!
- While the chicken bakes, combine honey, hot sauce, crushed red pepper flakes (if using), and apple cider vinegar (if using) in a small saucepan over low heat. Stir until warm and well combined. Taste and adjust spice level.
- Once the chicken is cooked, remove it from the oven. Sprinkle crumbled feta cheese evenly over the top, then drizzle generously with the hot honey.
- Return the baking dish to the oven for 3-5 minutes, just until the feta is warmed through and slightly softened, and the hot honey starts to caramelize.
- Garnish with fresh parsley or basil (if using). Serve hot with lemon wedges (optional).
