Ingredients:

  • 2 lbs (900g) boneless, skinless chicken breasts or thighs
  • 1 cup (240ml) BBQ sauce
  • ¼ cup (60ml) hot honey
  • 1 tbsp (15ml) apple cider vinegar
  • 1 tsp (5ml) smoked paprika
  • 1 tsp (5ml) garlic powder
  • ½ tsp (2.5ml) onion powder
  • ½ tsp (2.5g) salt
  • ¼ tsp (1.25g) black pepper
  • 6 sandwich buns or rolls

Instructions:

  1. In a large bowl, whisk together the BBQ sauce, hot honey, apple cider vinegar, smoked paprika, garlic powder, onion powder, salt, and pepper until well combined.
  2. Place the chicken breasts or thighs in the slow cooker. Pour the sauce mixture over the chicken, ensuring it's well coated. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is very tender and easily shreds.
  3. Remove the cooked chicken from the slow cooker (leaving the sauce behind). Using two forks, shred the chicken into bite-sized pieces.
  4. Return the shredded chicken to the slow cooker and stir to coat thoroughly with the sauce. Let it sit for 5-10 minutes to absorb the sauce.
  5. Toast the buns (optional, but recommended!). Pile a generous amount of the hot honey BBQ pulled chicken onto the bottom bun. Top with your desired toppings, such as coleslaw, pickles, and red onion. Drizzle with extra hot honey for an extra kick (if you dare!). Place the top bun on the sandwich and serve immediately.
