Ingredients:
- 4 boneless, skinless chicken breasts (or thighs), pounded to ½-inch thickness
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- Salt and freshly ground black pepper to taste
- 3 tablespoons Dijon mustard
- 2 tablespoons honey
- 1 tablespoon mayonnaise (optional)
- 1 teaspoon apple cider vinegar or lemon juice
- Salt and freshly ground black pepper to taste
- 4 burger buns
- 4 lettuce leaves
- 1 medium tomato, sliced
- ¼ red onion, thinly sliced (optional)
- 4 dill pickle spears, sliced (optional)
- 4 slices Swiss or cheddar cheese (optional)
Instructions:
- Pound chicken breasts to an even thickness. Season generously with olive oil, garlic powder, smoked paprika, salt, and pepper. Let marinate for 10-15 minutes.
- In a small bowl, whisk together Dijon mustard, honey, mayonnaise (if using), apple cider vinegar or lemon juice, salt, and pepper until smooth. Set aside.
- Preheat skillet or grill pan over medium-high heat. Cook chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C). During the last minute of cooking, brush chicken with some of the honey-mustard sauce. If using cheese, add it during the final minute of cooking to allow it to melt.
- Lightly toast the burger buns in a toaster or in the skillet/grill pan.
- Spread remaining honey-mustard sauce on both sides of the toasted buns. Layer lettuce, cooked chicken, tomato, onion, and pickles (if using). Top with the other half of the bun.
- Serve immediately. Enjoy hot with your favourite sides.
