Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs), pounded to ½-inch thickness
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 3 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon mayonnaise (optional)
  • 1 teaspoon apple cider vinegar or lemon juice
  • Salt and freshly ground black pepper to taste
  • 4 burger buns
  • 4 lettuce leaves
  • 1 medium tomato, sliced
  • ¼ red onion, thinly sliced (optional)
  • 4 dill pickle spears, sliced (optional)
  • 4 slices Swiss or cheddar cheese (optional)

Instructions:

  1. Pound chicken breasts to an even thickness. Season generously with olive oil, garlic powder, smoked paprika, salt, and pepper. Let marinate for 10-15 minutes.
  2. In a small bowl, whisk together Dijon mustard, honey, mayonnaise (if using), apple cider vinegar or lemon juice, salt, and pepper until smooth. Set aside.
  3. Preheat skillet or grill pan over medium-high heat. Cook chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C). During the last minute of cooking, brush chicken with some of the honey-mustard sauce. If using cheese, add it during the final minute of cooking to allow it to melt.
  4. Lightly toast the burger buns in a toaster or in the skillet/grill pan.
  5. Spread remaining honey-mustard sauce on both sides of the toasted buns. Layer lettuce, cooked chicken, tomato, onion, and pickles (if using). Top with the other half of the bun.
  6. Serve immediately. Enjoy hot with your favourite sides.
