Ingredients:

  • 1 lb (450g) carrots, peeled and cut into 1/2-inch thick sticks or chunks
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon fresh thyme leaves, finely chopped (or ½ teaspoon dried thyme)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh thyme sprigs, for garnish (optional)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine carrots, olive oil, honey, thyme, salt, and pepper.
  3. Toss well to ensure carrots are evenly coated.
  4. Line a baking sheet with parchment paper (optional).
  5. Spread carrots in a single layer on the prepared baking sheet. Avoid overcrowding!
  6. Roast for 25-30 minutes, stirring halfway through. Carrots should be tender and slightly caramelized.
  7. Transfer roasted carrots to a serving dish.
  8. Garnish with fresh thyme sprigs (optional).
  9. Serve warm.
