Ingredients:
- 1 lb (450g) carrots, peeled and cut into 1/2-inch thick sticks or chunks
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 teaspoon fresh thyme leaves, finely chopped (or ½ teaspoon dried thyme)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Fresh thyme sprigs, for garnish (optional)
Instructions:
- Preheat oven to 400°F (200°C).
- In a large bowl, combine carrots, olive oil, honey, thyme, salt, and pepper.
- Toss well to ensure carrots are evenly coated.
- Line a baking sheet with parchment paper (optional).
- Spread carrots in a single layer on the prepared baking sheet. Avoid overcrowding!
- Roast for 25-30 minutes, stirring halfway through. Carrots should be tender and slightly caramelized.
- Transfer roasted carrots to a serving dish.
- Garnish with fresh thyme sprigs (optional).
- Serve warm.
