Ingredients:

  • 1 lb (454g) ground beef (80/20 blend is recommended)
  • ½ small onion, finely diced (about ½ cup)
  • 2 cloves garlic, minced (about 1 teaspoon)
  • ½ cup (120ml) BBQ sauce
  • 2 tbsp (30ml) honey
  • 1 tsp (5ml) smoked paprika
  • Salt and pepper to taste
  • 8 small flour or corn tortillas (6-inch diameter)
  • 1 cup (80g) shredded lettuce
  • 1 cup (100g) shredded cheese
  • ½ cup (75g) diced tomatoes
  • ¼ cup (15g) chopped fresh cilantro (optional)
  • ¼ cup (60ml) sour cream or Greek yogurt (optional)
  • Lime wedges, for serving

Instructions:

  1. In a large skillet over medium heat, brown the ground beef, breaking it up with a spatula. Drain off any excess grease.
  2. Add the diced onion and minced garlic to the skillet. Cook until softened and fragrant.
  3. Stir in the BBQ sauce, honey, smoked paprika, salt, and pepper.
  4. Reduce heat to low and simmer for 5-7 minutes, stirring occasionally, until the sauce thickens and coats the beef.
  5. Warm the tortillas according to your preferred method (dry skillet, microwave, or oven).
  6. Spoon the Honey BBQ Beef mixture into each warm tortilla.
  7. Top with shredded lettuce, cheese, diced tomatoes, cilantro (if using), and a dollop of sour cream (if using).
  8. Serve immediately with lime wedges.
