Ingredients:
- 1 lb (454g) ground beef (80/20 blend is recommended)
- ½ small onion, finely diced (about ½ cup)
- 2 cloves garlic, minced (about 1 teaspoon)
- ½ cup (120ml) BBQ sauce
- 2 tbsp (30ml) honey
- 1 tsp (5ml) smoked paprika
- Salt and pepper to taste
- 8 small flour or corn tortillas (6-inch diameter)
- 1 cup (80g) shredded lettuce
- 1 cup (100g) shredded cheese
- ½ cup (75g) diced tomatoes
- ¼ cup (15g) chopped fresh cilantro (optional)
- ¼ cup (60ml) sour cream or Greek yogurt (optional)
- Lime wedges, for serving
Instructions:
- In a large skillet over medium heat, brown the ground beef, breaking it up with a spatula. Drain off any excess grease.
- Add the diced onion and minced garlic to the skillet. Cook until softened and fragrant.
- Stir in the BBQ sauce, honey, smoked paprika, salt, and pepper.
- Reduce heat to low and simmer for 5-7 minutes, stirring occasionally, until the sauce thickens and coats the beef.
- Warm the tortillas according to your preferred method (dry skillet, microwave, or oven).
- Spoon the Honey BBQ Beef mixture into each warm tortilla.
- Top with shredded lettuce, cheese, diced tomatoes, cilantro (if using), and a dollop of sour cream (if using).
- Serve immediately with lime wedges.
