Ingredients:
- 2 cups all-purpose flour
- 3 large eggs
- 1 tablespoon olive oil
- ½ teaspoon salt
- 1 cup ricotta cheese
- 1 cup fresh spinach
- ¼ cup grated parmesan cheese
- 1 egg yolk
- Salt and pepper to taste
- ½ cup marinara sauce
- Fresh basil
Instructions:
- Combine flour and salt in a bowl.
- Form a well in the centre; add eggs and olive oil.
- Gradually mix flour into the eggs until a dough forms.
- Knead the dough for about 10 minutes until smooth.
- Wrap in plastic wrap and let it rest for 30 minutes.
- In a bowl, mix ricotta, spinach, parmesan, and egg yolk.
- Season with salt and pepper to taste.
- Divide the dough into quarters.
- Roll out the first quarter until thin using a rolling pin or pasta maker.
- Place small spoonfuls of filling along one side of the dough, leaving space in between.
- Fold the dough over and use a fork to seal each ravioli.
- Repeat with remaining dough and filling.
- Bring a large pot of salted water to a gentle boil.
- Carefully add ravioli and cook for 4-5 minutes until they float.
- Remove with a slotted spoon and drain.
- Plate the ravioli, top with marinara sauce, and garnish with fresh basil.
