Ingredients:

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • 1 cup ricotta cheese
  • 1 cup fresh spinach
  • ¼ cup grated parmesan cheese
  • 1 egg yolk
  • Salt and pepper to taste
  • ½ cup marinara sauce
  • Fresh basil

Instructions:

  1. Combine flour and salt in a bowl.
  2. Form a well in the centre; add eggs and olive oil.
  3. Gradually mix flour into the eggs until a dough forms.
  4. Knead the dough for about 10 minutes until smooth.
  5. Wrap in plastic wrap and let it rest for 30 minutes.
  6. In a bowl, mix ricotta, spinach, parmesan, and egg yolk.
  7. Season with salt and pepper to taste.
  8. Divide the dough into quarters.
  9. Roll out the first quarter until thin using a rolling pin or pasta maker.
  10. Place small spoonfuls of filling along one side of the dough, leaving space in between.
  11. Fold the dough over and use a fork to seal each ravioli.
  12. Repeat with remaining dough and filling.
  13. Bring a large pot of salted water to a gentle boil.
  14. Carefully add ravioli and cook for 4-5 minutes until they float.
  15. Remove with a slotted spoon and drain.
  16. Plate the ravioli, top with marinara sauce, and garnish with fresh basil.
