Ingredients:
- 1 cup warm water (105°F–110°F)
- 2 tsp granulated sugar
- 2.25 tsp active dry yeast
- 3 cups all-purpose flour
- 1 tsp fine sea salt
- 2 tbsp extra virgin olive oil
Instructions:
- In a small bowl, combine warm water, sugar, and yeast. Stir gently and let sit for 5–8 minutes until a thick, frothy foam forms.
- In a large mixing bowl, whisk together the all-purpose flour and fine sea salt. Create a well in the center.
- Pour the yeast mixture and extra virgin olive oil into the well. Mix with a wooden spoon or hands until a shaggy dough forms.
- Turn dough onto a lightly floured surface and knead for 5–7 minutes until smooth, elastic, and slightly tacky.
- Place dough in a lightly oiled bowl, cover with a damp cloth, and let rise in a warm spot for 45 minutes until doubled in size.
- Punch dough down and divide into 8 equal pieces (approx. 75g each). Roll into smooth balls, cover, and rest for 10 minutes.
- Roll each ball into a 1/4-inch thick disc using a rolling pin.
- Heat a cast iron skillet over medium-high heat. Cook each pita for 1-2 minutes per side until puffed and lightly browned.
