Ingredients:

  • 1 cup kosher salt
  • 1/2 cup packed brown sugar
  • 1 gallon water
  • 1 tablespoon black peppercorns
  • 10-12 fresh thyme sprigs
  • 4-5 fresh rosemary sprigs
  • 3-4 bay leaves
  • 1 tablespoon crushed garlic (about 6 cloves)
  • Optional: 1 tablespoon allspice berries

Instructions:

  1. Combine water, kosher salt, and brown sugar in a large pot. Heat over medium heat, stirring until salt and sugar dissolve completely.
  2. Once dissolved, add peppercorns, thyme, rosemary, bay leaves, garlic, and optional allspice. Simmer for 5-10 minutes to release herb flavors.
  3. Remove from heat and let the brine cool to room temperature. Refrigerate or add ice to chill completely.
  4. Place the turkey in a resealable brining bag or container. Pour the cooled brine over the turkey, ensuring it's fully submerged. Seal the bag or cover the container and refrigerate for 8-12 hours.
  5. After brining, remove the turkey and rinse under cool water. Pat dry with paper towels before cooking.
