Ingredients:
- 4 large sweet potatoes (about 2 lbs or 900 g)
- 1/2 cup (115 g) unsalted butter, softened
- 1/3 cup (65 g) brown sugar, packed
- 1/4 cup (60 ml) milk (dairy or almond for dairy-free)
- 2 large eggs
- 1 tsp (5 g) vanilla extract
- 1/2 tsp (2 g) ground cinnamon
- 1/4 tsp (1 g) ground nutmeg
- 1/4 tsp (1 g) salt
- 2 cups (about 200 g) mini marshmallows
Instructions:
- Preheat the oven to 350°F (175°C).
- Peel and chop sweet potatoes into 1-inch cubes.
- Boil sweet potatoes in a large saucepan until tender (about 15-20 minutes).
- Drain and return sweet potatoes to the pot, then mash until smooth.
- Stir in butter, brown sugar, milk, eggs, vanilla, cinnamon, nutmeg, and salt.
- Transfer the sweet potato mixture to a greased baking dish.
- Bake in preheated oven for 25 minutes.
- Remove from oven, sprinkle marshmallows evenly on top.
- Return to oven and bake for an additional 10-15 minutes, or until marshmallows are golden brown.
- Allow to cool slightly before serving.
