Ingredients:

  • 4 large sweet potatoes (about 2 lbs or 900 g)
  • 1/2 cup (115 g) unsalted butter, softened
  • 1/3 cup (65 g) brown sugar, packed
  • 1/4 cup (60 ml) milk (dairy or almond for dairy-free)
  • 2 large eggs
  • 1 tsp (5 g) vanilla extract
  • 1/2 tsp (2 g) ground cinnamon
  • 1/4 tsp (1 g) ground nutmeg
  • 1/4 tsp (1 g) salt
  • 2 cups (about 200 g) mini marshmallows

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Peel and chop sweet potatoes into 1-inch cubes.
  3. Boil sweet potatoes in a large saucepan until tender (about 15-20 minutes).
  4. Drain and return sweet potatoes to the pot, then mash until smooth.
  5. Stir in butter, brown sugar, milk, eggs, vanilla, cinnamon, nutmeg, and salt.
  6. Transfer the sweet potato mixture to a greased baking dish.
  7. Bake in preheated oven for 25 minutes.
  8. Remove from oven, sprinkle marshmallows evenly on top.
  9. Return to oven and bake for an additional 10-15 minutes, or until marshmallows are golden brown.
  10. Allow to cool slightly before serving.
