Ingredients:

  • 2 cups (240g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (2g) baking powder
  • 1 tsp (5g) ground cinnamon
  • 1/2 tsp (2g) ground nutmeg
  • 1/4 tsp (1g) salt
  • 1/2 cup (120ml) vegetable oil
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tsp (5ml) pure vanilla extract
  • 2 cups (300g) grated zucchini (about 2 medium zucchinis)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease the loaf pan with oil or line it with parchment paper.
  3. In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. In another bowl, whisk together the oil, sugar, eggs, and vanilla until well combined.
  5. Grate the zucchinis using a box grater; do not peel them.
  6. Gently fold the grated zucchini into the wet mixture, then slowly add this to the dry ingredients. Mix until just combined; do not overmix.
  7. Pour the batter into the prepared loaf pan.
  8. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the centre comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
