Ingredients:
- 2 cups (240g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (2g) baking powder
- 1 tsp (5g) ground cinnamon
- 1/2 tsp (2g) ground nutmeg
- 1/4 tsp (1g) salt
- 1/2 cup (120ml) vegetable oil
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 tsp (5ml) pure vanilla extract
- 2 cups (300g) grated zucchini (about 2 medium zucchinis)
Instructions:
- Preheat your oven to 350°F (175°C).
- Grease the loaf pan with oil or line it with parchment paper.
- In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the oil, sugar, eggs, and vanilla until well combined.
- Grate the zucchinis using a box grater; do not peel them.
- Gently fold the grated zucchini into the wet mixture, then slowly add this to the dry ingredients. Mix until just combined; do not overmix.
- Pour the batter into the prepared loaf pan.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the centre comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
