Ingredients:
- 1 lb ground beef or turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can black beans, rinsed and drained
- 1 can kidney beans, rinsed and drained
- 1 can corn, drained
- 1 can diced tomatoes
- 2 cups beef or vegetable broth
- 1 packet taco seasoning mix
- Shredded cheese (cheddar, Monterey Jack, etc.)
- Sour cream
- Chopped fresh cilantro
- Sliced jalapeños
- Tortilla chips
Instructions:
- Dice onion and mince garlic.
- In a large pot, brown the ground beef or turkey over medium heat until fully cooked and no longer pink. Drain excess fat.
- Add diced onion and minced garlic to the pot. Sauté until softened (about 3-4 minutes).
- Stir in black beans, kidney beans, corn, diced tomatoes, broth, and taco seasoning.
- Bring the soup to a boil, then reduce heat and let it simmer for 20 minutes, stirring occasionally.
- Taste and adjust seasoning if necessary. Add salt and pepper to preference.
- Ladle the soup into bowls and top with optional garnishes.
