Ingredients:

  • 1 lb ground beef or turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can black beans, rinsed and drained
  • 1 can kidney beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 2 cups beef or vegetable broth
  • 1 packet taco seasoning mix
  • Shredded cheese (cheddar, Monterey Jack, etc.)
  • Sour cream
  • Chopped fresh cilantro
  • Sliced jalapeños
  • Tortilla chips

Instructions:

  1. Dice onion and mince garlic.
  2. In a large pot, brown the ground beef or turkey over medium heat until fully cooked and no longer pink. Drain excess fat.
  3. Add diced onion and minced garlic to the pot. Sauté until softened (about 3-4 minutes).
  4. Stir in black beans, kidney beans, corn, diced tomatoes, broth, and taco seasoning.
  5. Bring the soup to a boil, then reduce heat and let it simmer for 20 minutes, stirring occasionally.
  6. Taste and adjust seasoning if necessary. Add salt and pepper to preference.
  7. Ladle the soup into bowls and top with optional garnishes.
