Ingredients:

  • 1 lb (450 g) ground beef or turkey (lean)
  • 1 medium onion, diced (about 1 cup or 150 g)
  • 2 cloves garlic, minced
  • 1 bell pepper (any color), diced
  • 1 can (15 oz or 425 g) canned black beans, drained and rinsed
  • 1 can (15 oz or 425 g) canned kidney beans, drained and rinsed
  • 1 can (28 oz or 794 g) crushed tomatoes
  • 1 cup (240 mL) beef broth
  • 2 tbsp (30 g) chili powder
  • 1 tbsp (15 g) ground cumin
  • 1 tbsp (15 g) smoked paprika
  • 1 tsp (5 g) salt
  • ½ tsp (2 g) black pepper
  • ½ tsp (1 g) cayenne pepper (optional, for heat)

Instructions:

  1. In a skillet over medium heat, brown the ground beef or turkey until fully cooked, about 5-7 minutes. Drain any excess fat, if necessary.
  2. While the meat is cooking, chop the onion, garlic, and bell pepper.
  3. Transfer the cooked meat to the slow cooker. Add the diced onion, garlic, bell pepper, drained beans, crushed tomatoes, and beef broth.
  4. Sprinkle the chili powder, cumin, smoked paprika, salt, black pepper, and cayenne pepper into the cooker. Stir well to combine all ingredients.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Taste the chili about 30 minutes before serving and adjust seasoning if necessary.
  7. Serve hot, garnished with your choice of toppings.
