Ingredients:
- 1 lb (450 g) ground beef or turkey (lean)
- 1 medium onion, diced (about 1 cup or 150 g)
- 2 cloves garlic, minced
- 1 bell pepper (any color), diced
- 1 can (15 oz or 425 g) canned black beans, drained and rinsed
- 1 can (15 oz or 425 g) canned kidney beans, drained and rinsed
- 1 can (28 oz or 794 g) crushed tomatoes
- 1 cup (240 mL) beef broth
- 2 tbsp (30 g) chili powder
- 1 tbsp (15 g) ground cumin
- 1 tbsp (15 g) smoked paprika
- 1 tsp (5 g) salt
- ½ tsp (2 g) black pepper
- ½ tsp (1 g) cayenne pepper (optional, for heat)
Instructions:
- In a skillet over medium heat, brown the ground beef or turkey until fully cooked, about 5-7 minutes. Drain any excess fat, if necessary.
- While the meat is cooking, chop the onion, garlic, and bell pepper.
- Transfer the cooked meat to the slow cooker. Add the diced onion, garlic, bell pepper, drained beans, crushed tomatoes, and beef broth.
- Sprinkle the chili powder, cumin, smoked paprika, salt, black pepper, and cayenne pepper into the cooker. Stir well to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Taste the chili about 30 minutes before serving and adjust seasoning if necessary.
- Serve hot, garnished with your choice of toppings.
