Ingredients:

  • 1 lb ground turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 medium carrots, diced
  • 1 can diced tomatoes, undrained
  • 2 cups low-sodium chicken broth
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1/2 tsp salt, or to taste
  • 1/4 tsp black pepper, or to taste
  • 3 cups elbow macaroni or any pasta of your choice
  • 1 cup frozen peas, optional
  • Fresh parsley or basil for garnish, optional

Instructions:

  1. Heat the pot over medium heat. Add onions and garlic, cooking until soft and fragrant (about 3-4 minutes).
  2. Add ground turkey to the pot. Stir until browned (about 5-7 minutes).
  3. Mix in the bell pepper, carrots, paprika, oregano, salt, and pepper. Cook for an additional 3-4 minutes.
  4. Stir in the diced tomatoes, tomato paste, and chicken broth.
  5. Bring the mixture to a boil, then stir in the elbow macaroni. Reduce heat and cover, letting it simmer for about 12-15 minutes, or until pasta is tender.
  6. Stir in frozen peas and cook for another 2-3 minutes.
  7. Taste and adjust seasoning as needed. Garnish with fresh herbs. Serve hot!
