Ingredients:
- 1 lb ground turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 medium carrots, diced
- 1 can diced tomatoes, undrained
- 2 cups low-sodium chicken broth
- 2 tbsp tomato paste
- 1 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
- 3 cups elbow macaroni or any pasta of your choice
- 1 cup frozen peas, optional
- Fresh parsley or basil for garnish, optional
Instructions:
- Heat the pot over medium heat. Add onions and garlic, cooking until soft and fragrant (about 3-4 minutes).
- Add ground turkey to the pot. Stir until browned (about 5-7 minutes).
- Mix in the bell pepper, carrots, paprika, oregano, salt, and pepper. Cook for an additional 3-4 minutes.
- Stir in the diced tomatoes, tomato paste, and chicken broth.
- Bring the mixture to a boil, then stir in the elbow macaroni. Reduce heat and cover, letting it simmer for about 12-15 minutes, or until pasta is tender.
- Stir in frozen peas and cook for another 2-3 minutes.
- Taste and adjust seasoning as needed. Garnish with fresh herbs. Serve hot!
