Ingredients:
- 2 cups (250g) All-purpose flour
- 2 tbsp (25g) Granulated sugar
- 2 tsp Baking powder
- 1 tsp Baking soda
- 1/2 tsp Fine sea salt
- 1 3/4 cups (415ml) Buttermilk, room temperature
- 2 Large eggs
- 4 tbsp (56g) Unsalted butter, melted and slightly cooled
- 1 tsp Pure vanilla extract
- 1.5 tbsp Neutral oil for greasing
Instructions:
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and fine sea salt until well combined.
- In a separate medium glass bowl, beat the 2 eggs into the buttermilk, vanilla extract, and melted butter.
- Pour the liquid mixture into the dry base and whisk until just combined, ensuring you do not overmix (a few small lumps are acceptable).
- Transfer the batter into a plastic squeeze bottle. If the batter is too viscous, thin with 1 tablespoon of buttermilk. Let the batter rest for 10 minutes to allow for starch hydration and leavening activation.
- Heat a wide non-stick griddle over medium-low heat and lightly grease with neutral oil.
- Using the squeeze bottle, draw the outline of a heart approximately 4-5 inches wide. Once the outline is set, fill in the center with batter.
- Cook until bubbles form on the surface and edges appear dry. Flip carefully and cook until the second side is golden brown.
