Ingredients:

  • 1 (14 ounce) package Lit'l Smokies cocktail sausages (about 400g)
  • 1 cup (240ml) canned pineapple chunks, with juice reserved
  • 1/2 cup (120ml) packed light brown sugar
  • 1/4 cup (60ml) soy sauce (low-sodium recommended)
  • 2 tablespoons (30ml) apple cider vinegar
  • 1 tablespoon (15ml) cornstarch
  • 1 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)
  • Wooden skewers, soaked in water

Instructions:

  1. Drain the pineapple chunks, reserving the juice. Set the chunks aside.
  2. In a small bowl, whisk together the reserved pineapple juice, brown sugar, soy sauce, apple cider vinegar, cornstarch, ginger, garlic powder, and red pepper flakes (if using).
  3. Place the Lit'l Smokies and pineapple chunks in the skillet. Pour the glaze over them.
  4. Bring the mixture to a simmer over medium heat, stirring occasionally. Cook for about 15-20 minutes, or until the sauce has thickened and the Lit'l Smokies are heated through and nicely glazed. Stir frequently to prevent sticking.
  5. Carefully thread the glazed Lit'l Smokies and pineapple chunks onto the soaked wooden skewers.
