Ingredients:
- 1 (14 ounce) package Lit'l Smokies cocktail sausages (about 400g)
- 1 cup (240ml) canned pineapple chunks, with juice reserved
- 1/2 cup (120ml) packed light brown sugar
- 1/4 cup (60ml) soy sauce (low-sodium recommended)
- 2 tablespoons (30ml) apple cider vinegar
- 1 tablespoon (15ml) cornstarch
- 1 teaspoon ground ginger
- 1/2 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes (optional)
- Wooden skewers, soaked in water
Instructions:
- Drain the pineapple chunks, reserving the juice. Set the chunks aside.
- In a small bowl, whisk together the reserved pineapple juice, brown sugar, soy sauce, apple cider vinegar, cornstarch, ginger, garlic powder, and red pepper flakes (if using).
- Place the Lit'l Smokies and pineapple chunks in the skillet. Pour the glaze over them.
- Bring the mixture to a simmer over medium heat, stirring occasionally. Cook for about 15-20 minutes, or until the sauce has thickened and the Lit'l Smokies are heated through and nicely glazed. Stir frequently to prevent sticking.
- Carefully thread the glazed Lit'l Smokies and pineapple chunks onto the soaked wooden skewers.
- Serve immediately and enjoy these hawaiian lit'l smokies!
