Ingredients:

  • 2 ripe avocados, pitted and mashed (approximately 400g / 14 oz)
  • 1/4 cup finely chopped red onion (approximately 30g / 1 oz)
  • 1/4 cup chopped cilantro (fresh coriander leaves) (approximately 5g / 0.2 oz)
  • 1 jalapeño, seeded and minced (optional, for heat) (approximately 5g / 0.2 oz)
  • 2 tablespoons lime juice, freshly squeezed (approximately 30ml / 1 fl oz)
  • 1/2 teaspoon salt (approximately 2.5g / 0.1 oz)
  • 1/4 teaspoon ground cumin (approximately 0.5g / 0.02 oz)
  • 4 boneless, skinless chicken breasts (approximately 600g / 21 oz)
  • 1 tablespoon olive oil (approximately 15ml / 0.5 fl oz)
  • 1 teaspoon chili powder (approximately 2g / 0.07 oz)
  • 1/2 teaspoon garlic powder (approximately 1g / 0.04 oz)
  • 1/4 teaspoon onion powder (approximately 0.5g / 0.02 oz)
  • Salt and black pepper to taste
  • 8 slices of sourdough bread (or your favourite bread)
  • 4 slices of Monterey Jack cheese (or your favourite melting cheese) (approximately 80g / 3 oz)
  • 2 tablespoons butter, softened (approximately 30g / 1 oz)

Instructions:

  1. Prepare the Guacamole: In a medium bowl, gently mash the avocados. Add the red onion, cilantro, jalapeño (if using), lime juice, salt, and cumin. Mix gently to combine. Set aside.
  2. Season the Chicken: In a small bowl, mix together chili powder, garlic powder, onion powder, salt, and pepper. Rub the mixture evenly over both sides of the chicken breasts.
  3. Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-7 minutes per side, or until cooked through and the internal temperature reaches 165°F (74°C).
  4. Assemble the Melts: Butter one side of each slice of bread. Place four slices of bread, butter-side down, in the skillet. Top each with a chicken breast, a generous amount of guacamole, and a slice of Monterey Jack cheese.
  5. Melt and Serve: Top with the remaining slices of bread, butter-side up. Cook for 2-3 minutes per side, or until the bread is golden brown and the cheese is melted and gooey. Cut in half and serve immediately.
