Ingredients:
- 1 lb lean ground turkey (99% fat free)
- 1 tbsp toasted sesame oil
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1/2 cup onion, finely diced
- 14 oz bag premium coleslaw mix
- 1/4 cup low sodium soy sauce
- 1 tbsp rice vinegar
- 2 green onions, sliced
Instructions:
- Heat the toasted sesame oil in your large skillet over medium high heat.
- Add the diced onion to the pan. Sauté for 3 minutes until translucent and fragrant.
- Push the onions to the side and add the ground turkey.
- Break the turkey into small crumbles with your spatula. Cook for 5-7 minutes until no pink remains and edges are browned.
- Stir in the minced garlic and grated ginger. Cook for 1 minute until you smell a strong aromatic sizzle.
- Pour in the entire bag of coleslaw mix. It will look like a lot, but it wilts down fast.
- Add the soy sauce and rice vinegar directly over the cabbage.
- Toss everything together for 3-4 minutes until the cabbage is tender but still has a snap.
- Remove the pan from the heat immediately.
- Fold in the sliced green onions and serve.
