Ingredients:

  • 1 lb lean ground turkey (99% fat free)
  • 1 tbsp toasted sesame oil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/2 cup onion, finely diced
  • 14 oz bag premium coleslaw mix
  • 1/4 cup low sodium soy sauce
  • 1 tbsp rice vinegar
  • 2 green onions, sliced

Instructions:

  1. Heat the toasted sesame oil in your large skillet over medium high heat.
  2. Add the diced onion to the pan. Sauté for 3 minutes until translucent and fragrant.
  3. Push the onions to the side and add the ground turkey.
  4. Break the turkey into small crumbles with your spatula. Cook for 5-7 minutes until no pink remains and edges are browned.
  5. Stir in the minced garlic and grated ginger. Cook for 1 minute until you smell a strong aromatic sizzle.
  6. Pour in the entire bag of coleslaw mix. It will look like a lot, but it wilts down fast.
  7. Add the soy sauce and rice vinegar directly over the cabbage.
  8. Toss everything together for 3-4 minutes until the cabbage is tender but still has a snap.
  9. Remove the pan from the heat immediately.
  10. Fold in the sliced green onions and serve.
