Ingredients:

  • 4 large ripe peaches, halved and pitted
  • 2 tbsp unsalted butter, melted
  • 3 tbsp light brown sugar, packed
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup mascarpone cheese, softened
  • 1/4 cup plain Greek yogurt
  • 2 tbsp honey
  • 1 tsp vanilla extract

Instructions:

  1. Preheat your grill to medium heat. In a small bowl, whisk together the melted butter, brown sugar, cinnamon, and salt until it forms a smooth paste.
  2. Use a pastry brush to generously coat the cut side of each peach half with the butter-sugar mixture.
  3. Place the peaches cut-side down directly onto the hot grates. Close the lid and grill for 4 to 5 minutes without moving them until deep, charred grill marks appear.
  4. Flip the peaches over and grill for another 2 to 3 minutes until the fruit is tender.
  5. While peaches are grilling, whisk together the softened mascarpone, Greek yogurt, honey, and vanilla extract in a bowl until silky and smooth.
  6. Plate the hot peaches immediately and spoon a generous dollop of the honey-mascarpone cream into the center of each half.
