Ingredients:
- 4 large ripe peaches, halved and pitted
- 2 tbsp unsalted butter, melted
- 3 tbsp light brown sugar, packed
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup mascarpone cheese, softened
- 1/4 cup plain Greek yogurt
- 2 tbsp honey
- 1 tsp vanilla extract
Instructions:
- Preheat your grill to medium heat. In a small bowl, whisk together the melted butter, brown sugar, cinnamon, and salt until it forms a smooth paste.
- Use a pastry brush to generously coat the cut side of each peach half with the butter-sugar mixture.
- Place the peaches cut-side down directly onto the hot grates. Close the lid and grill for 4 to 5 minutes without moving them until deep, charred grill marks appear.
- Flip the peaches over and grill for another 2 to 3 minutes until the fruit is tender.
- While peaches are grilling, whisk together the softened mascarpone, Greek yogurt, honey, and vanilla extract in a bowl until silky and smooth.
- Plate the hot peaches immediately and spoon a generous dollop of the honey-mascarpone cream into the center of each half.
