Ingredients:

  • 4-6 mielies (corn on the cob), with husks
  • 150 g softened butter
  • ½ cup (125 ml) PEPPADEW® Mild Chunky Vegetable Atchar
  • A few sprigs of fresh thyme
  • A squeeze of fresh lime juice
  • Sea salt and freshly ground black pepper

Instructions:

  1. - Pull the husks of the mielies downwards to expose the corn. - Twist the husks and place them in a bowl of cold water. This helps prevent the husks from catching fire while cooking.
  2. - Place the soaked mielies over hot coals on your braai or BBQ. - Turn them every 2–3 minutes until they start to soften and develop a slight char, continuing this process until fully cooked.
  3. - In a small bowl, combine softened butter with PEPPADEW® Mild Chunky Vegetable Atchar, fresh thyme leaves, lime juice, sea salt, and freshly ground black pepper. - Mix well until combined.
  4. - Remove cooked mielies from heat and place them on a serving platter. - Add a generous dollop of Atchar butter to each mielie. - Scatter additional fresh thyme leaves just before serving for garnish.
