Ingredients:

  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 1 teaspoon fresh rosemary, chopped
  • Salt and pepper, to taste
  • 4 bluefish fillets (about 6 ounces each)
  • Lemon wedges, for serving

Instructions:

  1. Whisk together olive oil, lemon juice, soy sauce, garlic, rosemary, salt, and pepper in a mixing bowl.
  2. Place bluefish fillets in a shallow dish. Pour the marinade over them and ensure they are well-coated. Cover and refrigerate for 30 minutes.
  3. Preheat your grill to medium-high heat (about 375°F / 190°C).
  4. Remove fillets from marinade; let excess marinade drip off. Lightly oil the grill grates to prevent sticking. Place fillets skin-side down on the grill. Cook for 5 minutes before gently flipping. Cook for an additional 3-5 minutes until the fish flakes easily with a fork and has grill marks.
  5. Remove from the grill and let rest for a few minutes before serving with lemon wedges.
