Ingredients:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 1/2 cup ranch dressing (store-bought or homemade)
- 2 tablespoons chipotle peppers in adobo sauce (finely chopped)
- 4 large flour tortillas
- 1 cup cooked white or brown rice
- 1 cup black beans (drained and rinsed)
- 1 cup shredded lettuce
Instructions:
- In a small bowl, mix olive oil, chili powder, garlic powder, cumin, salt, and pepper.
- Rub the spice mixture all over both sides of the chicken breasts.
- Preheat your grill or grill pan over medium-high heat.
- Grill chicken for about 6–7 minutes on each side or until fully cooked (internal temperature should reach 165°F / 74°C).
- Remove from heat and let it rest for 5 minutes before slicing.
- In a small bowl, combine ranch dressing with chopped chipotle peppers in adobo sauce.
- Mix well until fully combined.
- Warm tortillas in a skillet or microwave until pliable.
- Spread about two tablespoons of chipotle ranch dressing onto each tortilla.
