Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 1/2 cup ranch dressing (store-bought or homemade)
  • 2 tablespoons chipotle peppers in adobo sauce (finely chopped)
  • 4 large flour tortillas
  • 1 cup cooked white or brown rice
  • 1 cup black beans (drained and rinsed)
  • 1 cup shredded lettuce

Instructions:

  1. In a small bowl, mix olive oil, chili powder, garlic powder, cumin, salt, and pepper.
  2. Rub the spice mixture all over both sides of the chicken breasts.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Grill chicken for about 6–7 minutes on each side or until fully cooked (internal temperature should reach 165°F / 74°C).
  5. Remove from heat and let it rest for 5 minutes before slicing.
  6. In a small bowl, combine ranch dressing with chopped chipotle peppers in adobo sauce.
  7. Mix well until fully combined.
  8. Warm tortillas in a skillet or microwave until pliable.
  9. Spread about two tablespoons of chipotle ranch dressing onto each tortilla.
