Instructions:
- Wash all fruit thoroughly. Peel and dice the kiwi fruit and honeydew melon into uniform, bite-sized pieces. Halve the grapes if they are large. Dice the Granny Smith apple (leaving the skin on).
- Place all prepared fruit (grapes, kiwi, melon, apple) into a large mixing bowl.
- In a separate small bowl, whisk together the fresh lime juice, honey (or maple syrup), lime zest, and the small pinch of salt until fully emulsified and smooth.
- Gently pour the glaze evenly over the fruit mixture. Using a large spatula or spoon, gently toss the fruit to ensure everything is lightly coated, being careful not to mash softer fruits.
- Sprinkle the chopped fresh mint over the salad and give one final, gentle fold.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled, garnished with extra mint if desired.
