Ingredients:
- 113g unsalted butter, softened
- 100g granulated sugar
- 50g packed light brown sugar
- 30ml milk
- 5ml vanilla extract
- 60g all-purpose flour
- 50g rolled oats (not instant)
- 1g baking powder
- Pinch of salt
Instructions:
- Preheat oven to 175°C (350°F). Line baking sheets with parchment paper or silicone baking mats.
- In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the milk and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, rolled oats, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Drop teaspoonfuls of batter onto the prepared baking sheets, leaving plenty of space between each cookie (at least 5-8cm), as they will spread a lot.
- Bake for 8-10 minutes, or until the edges are golden brown and the centers are bubbly. Watch them carefully!
- Let the cookies cool on the baking sheet for a minute or two to firm up slightly. Then, carefully transfer them to a wire rack to cool completely.
- Once cooled, store in an airtight container and serve Grandma's Lace Cookies.
