Ingredients:

  • 113g unsalted butter, softened
  • 100g granulated sugar
  • 50g packed light brown sugar
  • 30ml milk
  • 5ml vanilla extract
  • 60g all-purpose flour
  • 50g rolled oats (not instant)
  • 1g baking powder
  • Pinch of salt

Instructions:

  1. Preheat oven to 175°C (350°F). Line baking sheets with parchment paper or silicone baking mats.
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the milk and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, rolled oats, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Drop teaspoonfuls of batter onto the prepared baking sheets, leaving plenty of space between each cookie (at least 5-8cm), as they will spread a lot.
  7. Bake for 8-10 minutes, or until the edges are golden brown and the centers are bubbly. Watch them carefully!
  8. Let the cookies cool on the baking sheet for a minute or two to firm up slightly. Then, carefully transfer them to a wire rack to cool completely.
  9. Once cooled, store in an airtight container and serve Grandma's Lace Cookies.
