Ingredients:

  • 1 cup (120g) All-purpose flour (plain flour)
  • 1/2 cup (50g) Rolled oats (not instant)
  • 1/2 cup (100g) Granulated sugar (caster sugar)
  • 1/4 cup (50g) Packed light brown sugar
  • 1/2 tsp Ground cinnamon
  • 1/4 tsp Ground nutmeg
  • 1/2 cup (113g/1 stick) Cold unsalted butter, cut into small cubes
  • 3 cups (approximately 6 medium) Apples, peeled, cored, and diced (Granny Smith, Honeycrisp, or Braeburn work well)
  • 2 tablespoons Lemon juice
  • 1/4 cup (50g) Granulated sugar (caster sugar)
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Ground nutmeg
  • 2 cups (250g) All-purpose flour (plain flour)
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 3/4 cup (150g) Granulated sugar (caster sugar)
  • 1/2 cup (100g) Vegetable oil (or melted coconut oil)
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 1 cup (240ml) Buttermilk (or 1 cup milk + 1 tbsp lemon juice, let sit for 5 minutes)

Instructions:

  1. Combine dry ingredients (flour, oats, sugars, spices) in a bowl for the crumble topping.
  2. Cut in cold butter using a pastry blender or pulse in a food processor until the mixture resembles coarse crumbs. Wrap and chill.
  3. Toss diced apples with lemon juice, sugar, cinnamon, and nutmeg. Set aside.
  4. Whisk together dry ingredients (flour, baking powder, baking soda, salt) in a bowl for the cake batter.
  5. In a separate bowl, whisk together wet ingredients (sugar, oil, eggs, vanilla, buttermilk).
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Preheat oven to 350°F (175°C). Grease and flour the springform pan, or line with parchment paper.
  8. Pour the cake batter into the prepared pan.
  9. Spread the spiced apples evenly over the batter.
  10. Crumble the chilled crumble topping evenly over the apples.
  11. Bake for 50-60 minutes, or until a toothpick inserted into the centre comes out clean. (If the topping browns too quickly, loosely cover the cake with foil.)
