Ingredients:
- 1 cup (120g) All-purpose flour (plain flour)
- 1/2 cup (50g) Rolled oats (not instant)
- 1/2 cup (100g) Granulated sugar (caster sugar)
- 1/4 cup (50g) Packed light brown sugar
- 1/2 tsp Ground cinnamon
- 1/4 tsp Ground nutmeg
- 1/2 cup (113g/1 stick) Cold unsalted butter, cut into small cubes
- 3 cups (approximately 6 medium) Apples, peeled, cored, and diced (Granny Smith, Honeycrisp, or Braeburn work well)
- 2 tablespoons Lemon juice
- 1/4 cup (50g) Granulated sugar (caster sugar)
- 1 teaspoon Ground cinnamon
- 1/2 teaspoon Ground nutmeg
- 2 cups (250g) All-purpose flour (plain flour)
- 2 teaspoons Baking powder
- 1/2 teaspoon Baking soda
- 1/2 teaspoon Salt
- 3/4 cup (150g) Granulated sugar (caster sugar)
- 1/2 cup (100g) Vegetable oil (or melted coconut oil)
- 2 Large eggs
- 1 teaspoon Vanilla extract
- 1 cup (240ml) Buttermilk (or 1 cup milk + 1 tbsp lemon juice, let sit for 5 minutes)
Instructions:
- Combine dry ingredients (flour, oats, sugars, spices) in a bowl for the crumble topping.
- Cut in cold butter using a pastry blender or pulse in a food processor until the mixture resembles coarse crumbs. Wrap and chill.
- Toss diced apples with lemon juice, sugar, cinnamon, and nutmeg. Set aside.
- Whisk together dry ingredients (flour, baking powder, baking soda, salt) in a bowl for the cake batter.
- In a separate bowl, whisk together wet ingredients (sugar, oil, eggs, vanilla, buttermilk).
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Preheat oven to 350°F (175°C). Grease and flour the springform pan, or line with parchment paper.
- Pour the cake batter into the prepared pan.
- Spread the spiced apples evenly over the batter.
- Crumble the chilled crumble topping evenly over the apples.
- Bake for 50-60 minutes, or until a toothpick inserted into the centre comes out clean. (If the topping browns too quickly, loosely cover the cake with foil.)
