Ingredients:
- 1.5 lbs (680g) tilapia fillets, about ½-inch thick
- 2 tablespoons (30ml) olive oil
- 1 lemon, zested and juiced (about 2 tablespoons juice)
- 1/2 cup (50g) grated Parmesan cheese, finely grated
- 1/4 cup (30g) panko breadcrumbs
- 2 tablespoons (10g) fresh parsley, chopped
- 1 tablespoon (5g) fresh basil, chopped
- 1 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions:
- Prep the Tilapia: Pat tilapia fillets dry with paper towels. Place on a baking sheet lined with parchment paper or lightly greased.
- Make the Parmesan Crust: In a small bowl, combine Parmesan cheese, panko breadcrumbs, parsley, basil, garlic powder, oregano, salt, and pepper.
- Dress the Fish: In another small bowl, whisk together olive oil and lemon juice. Brush the tilapia fillets with the olive oil-lemon juice mixture.
- Add the Crust: Evenly sprinkle the Parmesan mixture over the tilapia fillets, pressing gently to adhere.
- Broil: Preheat broiler to high. Place the baking sheet on the top rack of the oven. Broil for 8-10 minutes, or until the fish is cooked through and the Parmesan crust is golden brown. Watch carefully to prevent burning!
- Serve: Remove from oven and serve immediately. Garnish with extra lemon wedges, if desired.
