Ingredients:

  • 2 medium zucchini (about 1 pound / 450g), cut into 1/2-inch thick fries
  • 1/2 cup (60g) all-purpose flour
  • 1/2 teaspoon (2.5ml) garlic powder
  • 1/4 teaspoon (1.25ml) salt
  • 1/4 teaspoon (1.25ml) black pepper
  • 2 large eggs, beaten
  • 1 cup (100g) panko bread crumbs
  • 1/2 cup (50g) grated Parmesan cheese
  • 1 teaspoon (5ml) dried oregano
  • 2 tablespoons (30ml) olive oil spray

Instructions:

  1. Wash and cut the zucchini into fry shapes.
  2. Prepare three shallow dishes: one with flour, garlic powder, salt and pepper, one with beaten eggs, and one with panko bread crumbs, Parmesan cheese, and oregano.
  3. Dredge each zucchini fry in flour, then dip in egg, and finally coat thoroughly in the panko mixture.
  4. Place breaded zucchini fries in a single layer in the air fryer basket, making sure not to overcrowd. You may need to cook in batches.
  5. Spray the zucchini fries lightly with olive oil spray. Air fry at 400°F (200°C) for 12-15 minutes, flipping halfway through, until golden brown and crispy.
  6. Remove from the air fryer and serve immediately with your favorite dipping sauce.
