Ingredients:
- 2 medium zucchini (about 1 pound / 450g), cut into 1/2-inch thick fries
- 1/2 cup (60g) all-purpose flour
- 1/2 teaspoon (2.5ml) garlic powder
- 1/4 teaspoon (1.25ml) salt
- 1/4 teaspoon (1.25ml) black pepper
- 2 large eggs, beaten
- 1 cup (100g) panko bread crumbs
- 1/2 cup (50g) grated Parmesan cheese
- 1 teaspoon (5ml) dried oregano
- 2 tablespoons (30ml) olive oil spray
Instructions:
- Wash and cut the zucchini into fry shapes.
- Prepare three shallow dishes: one with flour, garlic powder, salt and pepper, one with beaten eggs, and one with panko bread crumbs, Parmesan cheese, and oregano.
- Dredge each zucchini fry in flour, then dip in egg, and finally coat thoroughly in the panko mixture.
- Place breaded zucchini fries in a single layer in the air fryer basket, making sure not to overcrowd. You may need to cook in batches.
- Spray the zucchini fries lightly with olive oil spray. Air fry at 400°F (200°C) for 12-15 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the air fryer and serve immediately with your favorite dipping sauce.
