Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) honey
- 1/4 cup (50g) light brown sugar, packed
- 1 large egg (50g)
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (1g) ground ginger
- 1/4 tsp (0.5g) ground cloves
- 1/4 tsp (1.5g) salt
- 1 cup (120g) powdered sugar
- 1 tbsp (15ml) milk
- 1/2 tsp (2.5ml) vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). In a mixing bowl, cream together the softened butter, honey, and brown sugar until the mixture is velvety and pale. Beat in the egg until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt. Slowly fold the dry mixture into the wet ingredients, stirring until a soft, tacky dough forms.
- Line a baking sheet with parchment paper. Scoop approximately 1.5 tablespoons of dough per cookie and roll into balls. Place them 2 inches apart and bake for 12–15 minutes until edges are set but centers look slightly underdone.
- Allow cookies to cool on the pan for 5 minutes before transferring to a wire rack. Whisk powdered sugar, milk, and vanilla extract until smooth, then drizzle over the cooled cookies.
