Ingredients:
- 2 English cucumbers, thinly sliced
- 1/2 small red onion, thinly sliced
- 1/2 tsp kosher salt
- 1/4 cup sour cream
- 2 tbsp white vinegar
- 1 tbsp granulated sugar
- 1 tbsp fresh dill, finely chopped
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
Instructions:
- Slice the cucumbers and red onion using a mandoline. Place the cucumber slices in a colander or on paper towels and sprinkle with salt. Let them sit for 5–10 minutes, then gently pat the cucumbers dry to remove excess moisture.
- In a small bowl, combine the sour cream, vinegar, sugar, chopped dill, pepper, and garlic powder. Whisk vigorously until the sugar has completely dissolved and the mixture is smooth.
- Add the dried cucumber slices and sliced red onion to a large mixing bowl. Pour the dressing over the vegetables and toss gently with a spatula until every slice is evenly coated.
- Place the salad in the refrigerator and chill for 15 minutes before serving to allow flavors to develop.
