Ingredients:

  • 2 English cucumbers, thinly sliced
  • 1/2 small red onion, thinly sliced
  • 1/2 tsp kosher salt
  • 1/4 cup sour cream
  • 2 tbsp white vinegar
  • 1 tbsp granulated sugar
  • 1 tbsp fresh dill, finely chopped
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder

Instructions:

  1. Slice the cucumbers and red onion using a mandoline. Place the cucumber slices in a colander or on paper towels and sprinkle with salt. Let them sit for 5–10 minutes, then gently pat the cucumbers dry to remove excess moisture.
  2. In a small bowl, combine the sour cream, vinegar, sugar, chopped dill, pepper, and garlic powder. Whisk vigorously until the sugar has completely dissolved and the mixture is smooth.
  3. Add the dried cucumber slices and sliced red onion to a large mixing bowl. Pour the dressing over the vegetables and toss gently with a spatula until every slice is evenly coated.
  4. Place the salad in the refrigerator and chill for 15 minutes before serving to allow flavors to develop.
