  • 1/4 cup (60ml) low-fat milk
  • 2 lbs (900g) tart apples, peeled, cored, and sliced
  • 1 tbsp (15ml) lemon juice
  • 1 tsp (5g) ground cinnamon
  • 1 cup (125g) all-purpose flour
  • 1/3 cup (65g) maple syrup
  • 1/2 cup (115g) cold unsalted butter, cubed
  • 1/2 tsp (2.5g) ground cinnamon
  • pinch of salt

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a 9x13-inch baking sheet with parchment paper.
  2. Peel, core, and thinly slice the apples into uniform rounds.
  3. Toss the apple slices gently with lemon juice and cinnamon in a bowl until evenly coated; set aside.
  4. Beat the softened butter and sugar with an electric mixer until the mixture is pale and fluffy.
  5. Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  6. Sift together the flour, baking powder, and salt.
  7. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined; do not overwork the batter.
  8. Spread the batter evenly across the prepared sheet pan.
  9. Arrange the sliced apples over the batter in an even layer.
  10. Prepare the streusel by mixing flour, maple syrup, cold cubed butter, cinnamon, and salt until a crumbly texture forms.
  11. Sprinkle the streusel topping evenly over the apple layer.
  12. Bake for 35 minutes or until the topping is golden brown and the cake is set.
