Ingredients:
- 12 oz (340g) spaghetti or fettuccine
- 1 tablespoon olive oil
- 1 pound (450g) cooked garlic sausage, sliced
- 3 cloves garlic, minced
- 1 cup (240ml) heavy cream
- 1 cup (150g) fresh spinach, chopped
- 1/2 cup (50g) grated Parmesan cheese
- Salt and pepper to taste
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for serving)
Instructions:
- Boil salted water in a large pot.
- Add pasta and cook until al dente (approximately 8-10 minutes).
- Reserve a cup of pasta water, then drain pasta.
- While pasta cooks, heat olive oil in a skillet over medium heat.
- Add sliced garlic sausage and cook until browned (about 5 minutes).
- Stir in minced garlic and sauté for 1 minute until fragrant.
- Add chopped spinach and cook until wilted.
- Pour in heavy cream, stirring to combine.
- Mix in Parmesan cheese, and season with salt, pepper, and red pepper flakes (if using).
- Add drained pasta to the skillet.
- Toss to combine, adding reserved pasta water as needed to reach desired sauce consistency.
- Plate pasta, garnish with fresh parsley, and serve hot.
