Ingredients:

  • 12 oz (340g) spaghetti or fettuccine
  • 1 tablespoon olive oil
  • 1 pound (450g) cooked garlic sausage, sliced
  • 3 cloves garlic, minced
  • 1 cup (240ml) heavy cream
  • 1 cup (150g) fresh spinach, chopped
  • 1/2 cup (50g) grated Parmesan cheese
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for serving)

Instructions:

  1. Boil salted water in a large pot.
  2. Add pasta and cook until al dente (approximately 8-10 minutes).
  3. Reserve a cup of pasta water, then drain pasta.
  4. While pasta cooks, heat olive oil in a skillet over medium heat.
  5. Add sliced garlic sausage and cook until browned (about 5 minutes).
  6. Stir in minced garlic and sauté for 1 minute until fragrant.
  7. Add chopped spinach and cook until wilted.
  8. Pour in heavy cream, stirring to combine.
  9. Mix in Parmesan cheese, and season with salt, pepper, and red pepper flakes (if using).
  10. Add drained pasta to the skillet.
  11. Toss to combine, adding reserved pasta water as needed to reach desired sauce consistency.
  12. Plate pasta, garnish with fresh parsley, and serve hot.
