Ingredients:

  • 1 cup (240ml) warm milk (105-115°F / 40-46°C)
  • 2 1/4 teaspoons (7g) active dry yeast (1 packet)
  • 1 tablespoon (12.5g) granulated sugar
  • 1 teaspoon (6g) salt
  • 2 tablespoons (30ml) olive oil
  • 3 cups (360g) all-purpose flour, plus more for dusting
  • 1 large egg, lightly beaten (for egg wash)
  • 6 tablespoons (85g) unsalted butter, melted
  • 4 cloves garlic, minced
  • 1/2 cup (50g) freshly grated Parmesan cheese, finely grated
  • 1/4 cup (15g) chopped fresh parsley
  • 1/4 teaspoon (1g) garlic powder
  • Pinch of red pepper flakes (optional)
  • 2 tablespoons (28g) melted butter
  • 2 tablespoons (20g) grated parmesan cheese
  • sprinkle of Italian herbs or dried parsley

Instructions:

  1. Combine warm milk, yeast, and sugar in a large bowl. Let stand for 5-10 minutes, until foamy.
  2. Add salt, olive oil, and flour to the yeast mixture. Mix until a shaggy dough forms. Knead on a lightly floured surface for 5-7 minutes, until smooth and elastic.
  3. Place dough in a lightly oiled bowl, turning to coat. Cover with cling film and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  4. While the dough rises, melt the butter in a saucepan or microwave. Stir in minced garlic, Parmesan cheese, parsley, garlic powder, and red pepper flakes (if using).
  5. Punch down the risen dough and roll it out into a large rectangle (approx. 12x18 inches/ 30x45cm). Brush the dough evenly with the garlic Parmesan butter mixture.
  6. Cut the dough into strips, about 2 inches (5cm) wide. Stack the strips on top of each other.
  7. Cut the stacked strips into rolls about 2 inches (5cm) wide.
  8. Arrange the rolls in the prepared cake pan. Cover loosely with cling film and let rise for 30 minutes.
  9. Preheat oven to 375°F (190°C). Brush the tops of the rolls with the lightly beaten egg. Sprinkle top with the remaining parmesean cheese and herbs.
  10. Bake for 20-25 minutes, or until golden brown and cooked through.
  11. Let the rolls cool in the pan for a few minutes before transferring them to a wire rack to cool slightly. Serve warm and enjoy the Garlic Parmesan Pull-Apart Rolls!
