Ingredients:

  • 1 pound (450g) ground beef (80/20 blend recommended for flavour)
  • 1/2 pound (225g) ground pork (optional, for added richness)
  • 1 cup (120g) panko breadcrumbs
  • 1/2 cup (60g) grated Parmesan cheese, plus extra for serving
  • 1/4 cup (60ml) milk
  • 2 large eggs, lightly beaten
  • 4 cloves garlic, minced (about 2 tablespoons)
  • 1 tablespoon dried Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup (60ml) olive oil, for drizzling and baking sheet

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup (optional).
  2. In a large mixing bowl, combine ground beef (and pork, if using), panko breadcrumbs, Parmesan cheese, milk, eggs, minced garlic, Italian seasoning, salt, and pepper.
  3. Gently mix all ingredients until just combined. Be careful not to overmix, as this can make the meatballs tough.
  4. Using your hands or a small ice cream scoop, form meatballs about 1-inch in diameter.
  5. Place the meatballs on the prepared baking sheet, leaving a little space between each.
  6. Lightly drizzle the meatballs with olive oil.
  7. Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and golden brown. The internal temperature should reach 165°F (74°C).
  8. Serve immediately, garnished with extra Parmesan cheese (if desired).
