Ingredients:
- 1 pound (450g) ground beef (80/20 blend recommended for flavour)
- 1/2 pound (225g) ground pork (optional, for added richness)
- 1 cup (120g) panko breadcrumbs
- 1/2 cup (60g) grated Parmesan cheese, plus extra for serving
- 1/4 cup (60ml) milk
- 2 large eggs, lightly beaten
- 4 cloves garlic, minced (about 2 tablespoons)
- 1 tablespoon dried Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup (60ml) olive oil, for drizzling and baking sheet
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup (optional).
- In a large mixing bowl, combine ground beef (and pork, if using), panko breadcrumbs, Parmesan cheese, milk, eggs, minced garlic, Italian seasoning, salt, and pepper.
- Gently mix all ingredients until just combined. Be careful not to overmix, as this can make the meatballs tough.
- Using your hands or a small ice cream scoop, form meatballs about 1-inch in diameter.
- Place the meatballs on the prepared baking sheet, leaving a little space between each.
- Lightly drizzle the meatballs with olive oil.
- Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and golden brown. The internal temperature should reach 165°F (74°C).
- Serve immediately, garnished with extra Parmesan cheese (if desired).
