Ingredients:

  • 1 pound (454g) ground chicken
  • 1 cup (100g) Italian-style breadcrumbs
  • ½ cup (50g) grated Parmesan cheese, plus extra for garnish
  • 3 cloves garlic, minced
  • ¼ cup (15g) fresh parsley, chopped
  • 1 large egg, lightly beaten
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • ¼ cup (60ml) milk
  • ½ cup (120ml) marinara sauce

Instructions:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, minced garlic, parsley, egg, onion powder, garlic powder, salt, pepper, Worcestershire sauce, and milk.
  3. Gently mix the ingredients until just combined. Avoid overmixing.
  4. Form the mixture into 4-6 oval-shaped meatloaves. Place them on the prepared baking sheet.
  5. Spoon marinara sauce over each meatloaf, spreading evenly.
  6. Bake for 30-40 minutes, or until the internal temperature reaches 165°F (74°C). Check doneness using a meat thermometer inserted into the center of a meatloaf.
  7. Remove from oven and let rest for 5-10 minutes before slicing. Garnish with extra Parmesan cheese and parsley (optional).
