Ingredients:

  • 1.5 lbs (680g) large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/4 cup (60ml) olive oil
  • 1/4 cup (packed) fresh parsley, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden or metal skewers (optional)

Instructions:

  1. In a medium bowl, whisk together the minced garlic, olive oil, parsley, rosemary, thyme, lemon juice, lemon zest, red pepper flakes (if using), salt, and pepper.
  2. Add the shrimp to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
  3. If using skewers, thread the marinated shrimp onto the skewers.
  4. Preheat your grill to medium-high heat (about 375-450°F or 190-230°C).
  5. Place the shrimp skewers (or individual shrimp) on the preheated grill. Cook for 2-4 minutes per side, or until the shrimp turn pink and opaque.
  6. Remove the shrimp from the grill and serve immediately with your favorite sides.
