Ingredients:
- 1.5 lbs (680g) large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1/4 cup (60ml) olive oil
- 1/4 cup (packed) fresh parsley, chopped
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Wooden or metal skewers (optional)
Instructions:
- In a medium bowl, whisk together the minced garlic, olive oil, parsley, rosemary, thyme, lemon juice, lemon zest, red pepper flakes (if using), salt, and pepper.
- Add the shrimp to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
- If using skewers, thread the marinated shrimp onto the skewers.
- Preheat your grill to medium-high heat (about 375-450°F or 190-230°C).
- Place the shrimp skewers (or individual shrimp) on the preheated grill. Cook for 2-4 minutes per side, or until the shrimp turn pink and opaque.
- Remove the shrimp from the grill and serve immediately with your favorite sides.
