Ingredients:

  • 4 salmon fillets (about 6 oz/170g each), skin-on or skinless
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp olive oil (30ml)
  • 4 tbsp unsalted butter (57g), melted
  • 4 cloves garlic, minced
  • 1/3 cup freshly grated Parmesan cheese (35g)
  • 1 tsp Italian seasoning
  • 1 tbsp lemon juice (15ml), freshly squeezed
  • 2 tbsp fresh parsley, chopped, plus extra for garnish
  • Lemon wedges, for serving (optional)

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Pat salmon fillets dry with paper towels. Place on prepared baking sheet, skin-side down if using skin-on. Season lightly with salt and pepper.
  3. In a small bowl, whisk together melted butter, minced garlic, Italian seasoning, lemon juice, and half of the chopped parsley.
  4. Spoon the garlic butter mixture evenly over each salmon fillet. Sprinkle Parmesan cheese evenly on top.
  5. Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork (internal temperature reaches 145°F/63°C).
  6. For a golden crust, broil on high for the last 1-2 minutes, watching carefully to prevent burning.
  7. Sprinkle with remaining parsley. Serve immediately with lemon wedges, if desired.
