Ingredients:
- 4 salmon fillets (about 6 oz/170g each), skin-on or skinless
- Salt and freshly ground black pepper, to taste
- 2 tbsp olive oil (30ml)
- 4 tbsp unsalted butter (57g), melted
- 4 cloves garlic, minced
- 1/3 cup freshly grated Parmesan cheese (35g)
- 1 tsp Italian seasoning
- 1 tbsp lemon juice (15ml), freshly squeezed
- 2 tbsp fresh parsley, chopped, plus extra for garnish
- Lemon wedges, for serving (optional)
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
- Pat salmon fillets dry with paper towels. Place on prepared baking sheet, skin-side down if using skin-on. Season lightly with salt and pepper.
- In a small bowl, whisk together melted butter, minced garlic, Italian seasoning, lemon juice, and half of the chopped parsley.
- Spoon the garlic butter mixture evenly over each salmon fillet. Sprinkle Parmesan cheese evenly on top.
- Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork (internal temperature reaches 145°F/63°C).
- For a golden crust, broil on high for the last 1-2 minutes, watching carefully to prevent burning.
- Sprinkle with remaining parsley. Serve immediately with lemon wedges, if desired.
