Ingredients:

  • 8 oz (225g) Spaghetti
  • 4 tbsp (57g) Unsalted Butter
  • 4 cloves Garlic, minced
  • 1/4 cup (60ml) Dry White Wine (optional)
  • 1/4 cup (60ml) Reserved Pasta Water
  • 2 tbsp Fresh Parsley, chopped
  • 1 tbsp Lemon Juice
  • 1/4 cup (25g) Grated Parmesan Cheese
  • Red Pepper Flakes (optional)
  • Salt and Black Pepper to taste

Instructions:

  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Reserve 1/4 cup pasta water before draining.
  2. Melt butter in a skillet over medium heat. Add minced garlic and red pepper flakes (if using) and sauté until fragrant, about 1-2 minutes.
  3. If using white wine, pour into the skillet and simmer for 1 minute, scraping up browned bits.
  4. Add cooked pasta to skillet with garlic butter (and wine, if used). Toss to coat. Add reserved pasta water, lemon juice, and Parmesan cheese. Toss until creamy.
  5. Stir in fresh parsley. Season with salt and black pepper to taste. Serve immediately, garnished with extra Parmesan and red pepper flakes, if desired.
