Instructions:
- If using a food processor, pulse the rolled oats until they resemble a coarse flour. If mixing by hand, skip this step.
- In the food processor or a large bowl, combine the ground oats (or whole oats), cocoa powder, and salt until evenly mixed.
- Add the maple syrup (or honey), melted coconut oil, almond butter, and vanilla extract to the dry mixture.
- Process or mix thoroughly until the mixture comes together into a thick, cohesive, sticky 'dough'. If using chocolate chips, stir them in by hand now.
- Cover the mixture and chill in the refrigerator for at least 45 minutes. This chilling time is crucial for the dough to become firm enough to roll.
- Remove the chilled mixture. Use a small cookie scoop or tablespoon to portion the dough and roll firmly between your palms into 1-inch balls.
- Place the formed bites onto a parchment-lined baking sheet and return them to the fridge or freezer for 10-15 minutes to fully firm up.
- Prepare the optional glaze: Gently melt the dark chocolate chips and coconut oil together in short bursts in the microwave or over a low double-boiler until smooth.
- Drizzle the glaze over the chilled No-Bake Brownie Bites, or simply dust with extra cocoa powder. Store in an airtight container in the refrigerator.
