  3. Add the maple syrup (or honey), melted coconut oil, almond butter, and vanilla extract to the dry mixture.
  4. Process or mix thoroughly until the mixture comes together into a thick, cohesive, sticky 'dough'. If using chocolate chips, stir them in by hand now.
  5. Cover the mixture and chill in the refrigerator for at least 45 minutes. This chilling time is crucial for the dough to become firm enough to roll.
  6. Remove the chilled mixture. Use a small cookie scoop or tablespoon to portion the dough and roll firmly between your palms into 1-inch balls.
  7. Place the formed bites onto a parchment-lined baking sheet and return them to the fridge or freezer for 10-15 minutes to fully firm up.
  8. Prepare the optional glaze: Gently melt the dark chocolate chips and coconut oil together in short bursts in the microwave or over a low double-boiler until smooth.
