Ingredients:
- 2 cups (250g) frozen blackberries
- 3/4 cup (150g) granulated sugar
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (2g) lemon zest
Instructions:
- Combine the frozen blackberries, granulated sugar, lemon juice, and lemon zest in a medium stainless steel saucepan. Stir gently to coat the berries and let the mixture sit for 5 minutes to allow the sugar to draw out the juices.
- Place the pan over medium-high heat. Bring the mixture to a rolling boil, stirring frequently to ensure the sugar dissolves and the berries do not stick to the bottom.
- Reduce the heat to medium and simmer for 10–12 minutes until the jam transforms into a glossy, thickened syrup and the berries have broken down.
- Perform the set test: place a small spoonful of jam onto a chilled plate and put it in the freezer for 60 seconds. Push the jam with your finger; if it wrinkles and holds its shape, remove the pan from the heat.
- Let the jam cool slightly in the pan to allow it to thicken further before transferring to an airtight glass jar.
