Ingredients:

  • 2 cups (250g) frozen blackberries
  • 3/4 cup (150g) granulated sugar
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (2g) lemon zest

Instructions:

  1. Combine the frozen blackberries, granulated sugar, lemon juice, and lemon zest in a medium stainless steel saucepan. Stir gently to coat the berries and let the mixture sit for 5 minutes to allow the sugar to draw out the juices.
  2. Place the pan over medium-high heat. Bring the mixture to a rolling boil, stirring frequently to ensure the sugar dissolves and the berries do not stick to the bottom.
  3. Reduce the heat to medium and simmer for 10–12 minutes until the jam transforms into a glossy, thickened syrup and the berries have broken down.
  4. Perform the set test: place a small spoonful of jam onto a chilled plate and put it in the freezer for 60 seconds. Push the jam with your finger; if it wrinkles and holds its shape, remove the pan from the heat.
  5. Let the jam cool slightly in the pan to allow it to thicken further before transferring to an airtight glass jar.
