Ingredients:
- 1 (15 ounce/425g) can whole kernel corn, drained
- 1 (15 ounce/425g) can sweet corn, drained
- 1 (4 ounce/115g) can diced green chilies, drained
- 1/2 cup (115g) mayonnaise
- 1/2 cup (115g) sour cream
- 1/2 cup (60g) shredded cheddar cheese
- 1/4 cup (30g) red onion, finely diced
- 1/4 cup (a handful) fresh cilantro, chopped
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cumin
- Salt and pepper to taste
- 5 ounces (140g) Fritos corn chips, lightly crushed
Instructions:
- In a large bowl, combine the drained corn (both kinds!), diced green chilies, and diced red onion.
- In a separate bowl, whisk together the mayonnaise, sour cream, cheddar cheese, cilantro, lime juice, chili powder, garlic powder, and cumin.
- Pour the dressing over the corn mixture and gently stir to combine, ensuring everything is coated evenly.
- Season with salt and pepper to taste. Give it a taste and adjust as needed.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. This step is optional, but recommended for a more harmonious flavor.
- Just before serving, gently fold in the crushed Fritos corn chips. Be gentle to keep them crunchy!
- Serve the fritos chili cheese corn salad immediately and enjoy!
