Ingredients:

  • 1 (15 ounce/425g) can whole kernel corn, drained
  • 1 (15 ounce/425g) can sweet corn, drained
  • 1 (4 ounce/115g) can diced green chilies, drained
  • 1/2 cup (115g) mayonnaise
  • 1/2 cup (115g) sour cream
  • 1/2 cup (60g) shredded cheddar cheese
  • 1/4 cup (30g) red onion, finely diced
  • 1/4 cup (a handful) fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • Salt and pepper to taste
  • 5 ounces (140g) Fritos corn chips, lightly crushed

Instructions:

  1. In a large bowl, combine the drained corn (both kinds!), diced green chilies, and diced red onion.
  2. In a separate bowl, whisk together the mayonnaise, sour cream, cheddar cheese, cilantro, lime juice, chili powder, garlic powder, and cumin.
  3. Pour the dressing over the corn mixture and gently stir to combine, ensuring everything is coated evenly.
  4. Season with salt and pepper to taste. Give it a taste and adjust as needed.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. This step is optional, but recommended for a more harmonious flavor.
  6. Just before serving, gently fold in the crushed Fritos corn chips. Be gentle to keep them crunchy!
  7. Serve the fritos chili cheese corn salad immediately and enjoy!
