Ingredients:
- 6 cups shredded cabbage
- 1 cup canned black beans, rinsed and drained
- 1 cup frozen or fresh corn
- 1/2 cup red onion, finely diced
- 1/2 cup red bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tbsp chipotle peppers in adobo sauce, minced
- 1 tbsp fresh lime juice
- 1 tsp honey
- 1/2 tsp garlic powder
- 2 cups Chili Cheese Fritos
- 1/2 cup shredded sharp cheddar cheese
Instructions:
- Combine the shredded cabbage, drained black beans, corn, red onion, and bell pepper in a large mixing bowl. Toss gently to ensure the colors are evenly distributed.
- In a separate small bowl, whisk together the mayonnaise, sour cream, minced chipotle, lime juice, honey, and garlic powder until smooth and the chipotle is evenly incorporated.
- Pour the dressing over the vegetable mixture and fold in until every strand of cabbage is coated.
- Just before serving, fold in the shredded cheese and the Frito chips. Serve immediately to maintain maximum crunch.
