Ingredients:

  • 6 cups shredded cabbage
  • 1 cup canned black beans, rinsed and drained
  • 1 cup frozen or fresh corn
  • 1/2 cup red onion, finely diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tbsp chipotle peppers in adobo sauce, minced
  • 1 tbsp fresh lime juice
  • 1 tsp honey
  • 1/2 tsp garlic powder
  • 2 cups Chili Cheese Fritos
  • 1/2 cup shredded sharp cheddar cheese

Instructions:

  1. Combine the shredded cabbage, drained black beans, corn, red onion, and bell pepper in a large mixing bowl. Toss gently to ensure the colors are evenly distributed.
  2. In a separate small bowl, whisk together the mayonnaise, sour cream, minced chipotle, lime juice, honey, and garlic powder until smooth and the chipotle is evenly incorporated.
  3. Pour the dressing over the vegetable mixture and fold in until every strand of cabbage is coated.
  4. Just before serving, fold in the shredded cheese and the Frito chips. Serve immediately to maintain maximum crunch.
