Ingredients:

  • 1 pound rattlesnake meat, cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 teaspoon hot sauce (adjust to taste)
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Oil for frying (canola or vegetable)
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1-2 teaspoons crushed red pepper flakes (adjust to taste)
  • 1 teaspoon garlic powder
  • Salt to taste

Instructions:

  1. In a mixing bowl, combine buttermilk and hot sauce. Add rattlesnake pieces; cover and marinate for at least 15 minutes.
  2. In another bowl, mix flour, paprika, garlic powder, cayenne pepper, salt, and black pepper.
  3. In a deep fryer or pot, heat oil to 350°F (175°C).
  4. Remove rattlesnake pieces from marinade, allowing excess to drip off. Dredge in flour mixture, ensuring even coating.
  5. Fry in batches until golden brown, about 3-4 minutes. Use a slotted spoon to remove; drain on paper towels.
  6. In a small saucepan, heat heavy cream over medium heat until warm. Stir in shredded cheddar and cream cheese until melted and smooth.
  7. Add crushed red pepper flakes, garlic powder, and salt; mix well.
  8. Arrange rattlesnake bites on a platter with cheese dip in the center; enjoy warm.
