- 1 pound rattlesnake meat, cut into bite-sized pieces
- 1 cup buttermilk
- 1 teaspoon hot sauce (adjust to taste)
- 1 cup all-purpose flour
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Oil for frying (canola or vegetable)
- 1 cup heavy cream
- 1 cup shredded sharp cheddar cheese
- 1/2 cup cream cheese, softened
- 1-2 teaspoons crushed red pepper flakes (adjust to taste)
- 1 teaspoon garlic powder
- Salt to taste
Instructions:
- In a mixing bowl, combine buttermilk and hot sauce. Add rattlesnake pieces; cover and marinate for at least 15 minutes.
- In another bowl, mix flour, paprika, garlic powder, cayenne pepper, salt, and black pepper.
- In a deep fryer or pot, heat oil to 350°F (175°C).
- Remove rattlesnake pieces from marinade, allowing excess to drip off. Dredge in flour mixture, ensuring even coating.
- Fry in batches until golden brown, about 3-4 minutes. Use a slotted spoon to remove; drain on paper towels.
- In a small saucepan, heat heavy cream over medium heat until warm. Stir in shredded cheddar and cream cheese until melted and smooth.
- Add crushed red pepper flakes, garlic powder, and salt; mix well.
- Arrange rattlesnake bites on a platter with cheese dip in the center; enjoy warm.
