Ingredients:
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder (optional)
- 1/4 teaspoon onion powder (optional)
- 3/4 cup cold water (or more as needed)
- Oil for frying
Instructions:
- In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, salt, black pepper, garlic powder, and onion powder. Whisk until well combined.
- Gradually add cold water to the dry mixture while stirring. Mix until you achieve a smooth batter consistency. If too thick, add additional water a tablespoon at a time.
- In a deep fryer or large pot, heat oil to 350°F (175°C). Ensure there is enough oil to fully submerge your food items.
- Dip your fish fillets or shrimp into the batter until theyre evenly coated. Allow any excess batter to drip off before frying.
- Carefully place the battered seafood into the hot oil in batches. Fry for about 3–5 minutes or until golden brown and cooked through. Avoid overcrowding the pan to maintain proper oil temperature.
- Remove fried items with a slotted spoon and drain on paper towels. Serve hot with tartar sauce or your favorite dipping sauce.
