Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup sparkling water (or club soda)
  • Oil for frying (vegetable or canola oil)

Instructions:

  1. <p>In a medium bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper.</p>
  2. <p>Gradually add the sparkling water to the dry ingredients while whisking until the batter is smooth and well combined.</p>
  3. <p>Heat oil in a deep fryer or large pot to 375°F (190°C).</p>
  4. <p>Dip your fish or seafood into the batter, allowing any excess to drip off.</p>
  5. <p>Carefully place the battered seafood into the hot oil and fry until golden brown and crispy, about 3–5 minutes per side.</p>
  6. <p>Remove from oil and drain on paper towels before serving.</p>
